What The Fork? Healthy Summer Snacks

Every month our family at Sophie & Trey decides on a focus for our company so we can inspire each other to be the best versions of ourselves. This month we are going to turn our focus on one of the most important aspects of our health: our diet!

When we think of summer we think of vacations, swimsuits and parties! We want to make sure we nourish our bodies with healthy summer snacks to keep our energy high and keep the fun going all summer long.  There are so many fruits and vegetables in season and with a little inspiration every meal or snack can be healthy and fun!

Here is a small list of just some of the benefits of adding more fruits and vegetable into your diet.

These healthy fruit popsicles are as easy to make as they are refreshing to eat!

Healthy Fruit Popsicles

These beautiful popsicles couldn’t be any easier and the result is definitely Instagram worthy!  If you are looking for the perfect snack to keep you cool and refreshed on a hot summer day you don’t want to miss out on this simple recipe.  Get creative and choose your favorite fruit and also popsicle mold shape!

INGREDIENTS

  • 8 chopped strawberries
  • 1/2 cup of blueberries
  • 1/2 cup of black berries
  • 2 chopped kiwi
  • 2 cups of coconut water

HOW TO PREPARE

  1. Layer your favorite colorful fruit into 6 popsicle molds.
  2. Pour coconut water over the fruit.
  3. Use a knife to push down fruit, get rid of any air pockets and to make sure the coconut water fills all empty space.
  4. Insert the popsicle sticks and freeze for several hours.
  5. When you are ready to serve take the popsicles out of the freezer and dip popsicle into warm water for 20 seconds.  This will make the popsicles easy to remove from the mold.
  6. Enjoy!
